Deep Fried Breaded Green Tomato’s in Potato Flakes
Lets make a super simple, relatively healthy side or main course even. The star of this show is the green tomato. Springs coming, lets use those green tomato’s up . Slice some medium or small green tomatos. The smaller the fruit is generally the more sour. The tartness does work quite well in this recipe.
I had some dried potato flakes on hand. This came out as a lighter panko type breading then flour. First dredge the tomato’s in flour. Next Dip in the beaten egg. Dredge with the potato flakes. Then into the hot oil. Fry until the crust is golden brown, flipping occasionally. Drain on a paper towel. Salt and pepper to taste.
